Tropical Chicken Salad - This taste of the tropics, bursting with fresh, juicy, fruit, chicken salad recipe, captures the citrus and chicken flavors phenomenally. A sweet, delicious, light tasting delight, it is quite refreshing, and is a No Cook and very easy recipe, perfect for beginners.

Ingredients to make Tropical Chicken Salad
3 oz/90 g cooked, long grain rice
1 oz/30 g pineapple in natural juice, drained, chopped
Half medium banana, sliced
15 oz/45 g black grapes, halved
2 ts Lemon juice.
1/4 oz/7 g sultanas
2 ts Desiccated coconut
1 tb Low fat natural yogurt
2 ts Low Cal mayonnaise
pnch Chili powder (optional)
2 oz/60 g cooked chicken, chopped
Salt and pepper.
Directions to make Tropical Chicken Salad
Step 1:Mix together the rice, pineapple, banana, grapes and lemon juice.
Step 2:In a small bowl combine the sultanas, coconut yogurt, mayonnaise and chili powder. Add the chicken and rice mixture stirring well to coat. Season with salt and pepper.
Step 3:Serve garnished with lemon slices and parsley sprigs.
